Vermont Hot Chocolate

Small Batch (1/4 Mix)

Ingredients

    • 4 cups of whole milk

    • 1/4 cup cacao

    • 3 tbsp of honey

    • 1 egg yolk

    • 1/3 tsp of vanilla extract

    • 1/2 tsp of cinnamon

    • 1/4 tsp cayenne pepper

    • 1/8 tsp of salt

Procedure

Note: do not exceed 160F or you will cook the egg and thicken the liquid beyond repair.

    1. Warm 4 cups of milk on gas stove to 100F

    2. Add cacao

    3. Add 3 tbsp of honey

    4. Add 1 egg yolk (no whites--discard) by intermediate method

    5. Add 1/3 tsp of vanilla extract

    6. Add 1/2 tsp of cinnamon

    7. Add 1/4 tsp cayenne pepper

    8. Add 1/8 tsp of salt

    9. Mix thoroughly and target 150F

The purpose of this document is to describe how hot chocolate was made on 2013-12-27 in a little town at 187m of elevation in VT at 1700ET at the Trudeau's cozy house.

    1. Began warming 14 cups of milk on gas stove

    2. Added 1 cup of warm milk to 1 cup cacao, mixed with fork (cacao amount est.)

    3. After cacao/milk smooth, added 1 cup more milk, mixed again

    4. Added cacao/milk mix to main milk mix (MMX)

    5. Added 0.75 cups of honey to MMX, careful not to burn on bottom

    6. Added 4 egg yolks (no whites--discard) by intermediate method, mixed well

    7. Added 1.25 tsp of vanilla extract

    8. Added 2.0 tsp of cinnamon

    9. Added 1 tsp cayenne pepper (probably should have stuck with just 0.5 tsp)

    10. Added 1 "pinches" of salt

    11. Mixed thoroughly, prevented from getting "too hot" (which would cook the eggs too much?)
